Salon Lanson Unveils the Spring Chapter of its‘Hong Kong Odyssey’ Cocktail Series
A seasonal journey through the city’s heritage, presented through artisanal cocktails and curated canapés

Hong Kong, 31 March 2026 – Salon Lanson the newest social heart of Causeway Bay, introduces the spring edition of its Hong Kong Odyssey cocktail series. Following a successful debut, this latest iteration presents a curated selection of nine bespoke cocktails, each meticulously crafted to capture the essence of the spring season and the storied streets found just a short walk from the doorstep of Lanson Place Causeway Bay.
Designed to offer a respite from the bustle of Causeway Bay, the series continues its commitment to celebrating the local neighbourhood through a narrative-led menu, presented as a walking map. Curated by Head Mixologist Manuel Saavedra, the cocktail collection seeks to capture the subtle nuances of the city, inviting guests to connect with the spirit of the neighbourhood from a contemporary perspective.
This spring, the focus shifts toward the light, clean and delicate profiles of shochu, providing a canvas that allows seasonal ingredients to shine. Each shochu-based creation incorporates hand-picked elements that embody the subtle essence of spring, making them an ideal choice for a relaxed Happy Hour or as a simple pre-dinner refreshment. To complement the cocktails, a rotating selection of canapés is also served, presenting a delightful and indulgent pairing for guests as they explore this liquid map of the city.
The Lanson Thaw is a refined take on the traditional clarified milk punch. At its heart lies the tropical sweetness of guava, balanced by the subtle herbal and spicy notes of perilla. This base is infused with shochu, lychee green tea and honey, before being clarified with fresh lemon juice. The result is a crystal-clear, refreshing cocktail that offers a quiet complexity on the palate.
Drawing inspiration from the incense coils of the nearby Tin Hau Temple, Incense & Tide is a sophisticated, Negroni-style creation. This bold cocktail features dried kumquat-infused shochu, balanced by Lapsang Souchong-infused Campari and sweet vermouth, resulting in a dark, smoky and layered profile. To complete the sensory experience, the drink is served with a burning Japanese incense, adding a fragrant depth that invites guests on a contemplative journey.
A refreshing take on the classic sour, Harmony Bloom celebrates the brighter notes of the season. In a creative twist, strawberry is balanced with white bean vinegar as a souring agent, lending a gentle acidity to the shochu. Elderflower syrup is added to introduce a delicate floral sweetness with a smooth, caramel-like finish. With this cocktail, Manuel pays homage to the nearby Po Leung Kuk, honouring its enduring commitment and contribution to social harmony that has defined the historic institution.
Inspired by the energy of the revitalised Central Market, the Pink Market Fizz is a playful yet refined hybrid of a highball and a seasonal spritz. This sparkling creation blends the fruitiness of lychee and raspberry with a clean shochu base, topped with chilled Prosecco for a bubbly finish. A subtle hint of saline solution elevates the botanical notes, enhancing the overall profile for a truly delightful serve.
A thoughtful reimagining of the classic Pisco Punch, the Twin Star Punch swaps traditional spirits for a clean shochu base. In a seasonal departure from pineapple, star fruit takes centre stage, imparting a delicate, crisp sweetness. Blended with Fuji apple juice and apricot liqueur, this easy-to-drink cocktail is a vibrant and fruity celebration of the spring harvest. The creation pays a playful tribute to the iconic Star Ferry, mirroring the celestial namesake of the vessels that have crossed the harbour for generations.
A masterclass in understated elegance, The Jockey’s Weight is a clear, Martini-style serve that belies its intricate preparation. The cocktail draws inspiration from the nearby racecourse, where the jockey’s weight is a critical, precise measurement that determines eligibility and performance—much like the disciplined precision required to create the cocktail itself. Manuel patiently employs a 48-hour cold infusion to preserve the delicate, volatile notes of lemongrass. This meticulous process ensures a colourless appearance whilst retaining a vibrant citrus-herb profile. Infused with cucumber and finished with a single drop of homemade blanched basil oil, this refined herbal aperitif offers a beautifully layered flavour.
Three curated canapé menus will be available on rotation, each featuring six pieces of savoury and sweet items designed to enhance the delicate profiles of the cocktails. Highlights across the menus include Champagne-Compressed Watermelon with Foie Gras Mousse, Honey-Glazed Pork Jowl with Lime and Lemongrass, Poached Red Prawn Tartare with Kristal Caviar, Beef Bourguignon Tart and Pistachio Baklava.
Individual cocktails are priced at HKD128 each. Alternatively, guests may indulge in a curated experience for HKD350 per person, which includes one signature cocktail paired with a set of six canapés.
